Breakfast kefir then bacon and egg
Lunch cheese, celery and a few LC seeded crackers followed by a couple of strawberries with spoon of yoghurt
Dinner frittata using leftovers served with salad followed by hm LC rhubarb and ginger cake warmed and served with yoghurt.

Greek yoghurt with blueberries for breakfast
Lunch was a couple of grilled mushrooms filled with blue cheese, avocado and ginger&turmeric sauerkraut.
Dinner was chicken thighs cooked with a creamy mushroom sauce and green beans.
We ate later than usual as we had unexpected visitors. It was nice to see them but it means I won’t be able to do the 16hr water fast I was hoping to do before my diabetic review and blood tests tomorrow.

Good luck tomorrow. I find 12 to 14 water fast works best for my lipid panel I seem to produce even higher lipids if go over 14 hours! Think my body just gets more helpful providing me with fats for energy.

Thanks for the fasting tips @shelley262 I think it was about 14 hrs in the end so fingers crossed. I’ve realised my coffee consumption has increased as I had a massive coffee headache until I got home after the appointment and could brew a strong cup. Time to cut down!
Greek yoghurt and walnuts for breakfast.
Tinned sardines in olive oil and a nice colourful salad for lunch. Followed by a DGF cake.
Dinner was a cheese, ham and mushroom omelette with turmeric and ginger sauerkraut. Montezuma’s AB with almonds and a cup of tea afterwards

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: chilli con carne with cauliflower rice.

Early breakfast - before heading out for day - of kefir then two poached eggs on one slice of low carb toast
Just black coffee while out.
Dinner pork meatballs followed by hm LC lemon cake and decaffeinated coffee
@DJC3 I've been moving to more decaffeinated coffee over this year- I started out by mixing it 50\50 caffeinated and decaffeinated grounds and now worked up to just decaffeinated at home and in flask if taking with me - when I now have a caffeine coffee at a cafe like I did today I really notice the difference! I drink a lot of coffee every day so felt it would be good to switch as much as possible.

after reading this forum, I decided to buy a low-carb bread mix.

I like how my bg reacts to this, but the taste is far from ordinary bread. It's too heavy for the stomach (because of the high protein content?), as if there's not enough salt and it tastes more like dough than ready-made bread. But if you spread butter and put cheese on top, you can eat it with coffee.

I've never been good at cooking, so I have no idea whether to blame the bread mix or my cooking skills.
It was written on the package that the dough could be used to make pizza or cupcakes, but I can't imagine that it would turn out to be something delicious.

That does look like quite a rustic loaf, but you’re right - lots of butter and cheese makes everything better!
Which company did you buy the bread mix from?

Good tip about mixing decaf with full strength coffee @shelley262 my first coffee of the day is a full strength Nespresso from the machine at my bedside. I use their decaf pods in the afternoon, but filter coffee up until lunchtime, I’ll try the half and half.

Which company did you buy the bread mix from?
this is a local company, obviously not in the UK, but it says in the composition that the mixture consists of almond flour, wheat gluten, flaxseed flour and inulin from chicory root. I still don't understand why the dough rises if we don't feed the yeast with sugar, and why do I need sugar-free yeast in this recipe?

2 boiled eggs for breakfast then off in a foraging course which was brilliant. She’d made us a picnic lunch, the wild garlic whipped feta was heavenly, and the frittata made with herbs and oxeye daisies looked wonderful - I had a tiny slice and discretely left potatoes.
Dinner was steak and salad.

Lunch a tin of mackerel fillets in olive oil mixed with some horseradish and served as an open sandwich using one slice of low carb bread and tomato garnish - followed by a couple of strawberries with spoon of yoghurt
Dinner a couple of lamb burgers served with a few onions and salads - I haven't got any low carb rolls at the moment must buy some for the summer (stored in freezer ready for when needed) as they are really useful for picnics and bbqs. Pudding low carb chocolate brownie with decaffeinated coffee. (I always treat myself to a dash of cream in my evening brew but try to stick I black during the day)
@DJC3 beautiful frittata - shame about the potatoes being included.

I've not had a lot of success with baking high protein and high fibre bread hence me buying ready made low carb rolls and bread - we are lucky to have several good low carb bakery companies in the UK who do a better job than I can - but they are expensive! Having said this I am having better success with flat breads like wraps and roti - using a Flour mix made by Panda Pantry and their good recipes and instruction videos. I'm planning to make rotis again this weekend and also trying out pitta bread for the first time next week.

I find almond flour does give a very cakey texture to everything. Fine if you are making cake but maybe not so appealing in bread. Have you tried a slice toasted? It might be better that way.
