What have you eaten today? (Low carb forum)

Just a question about low carbs rolls and bread which one are the best and where to get then from ?
 
Breakfast kefir then some tomatoes fried in olive oil with a poached egg on LC toast
Lunch cheese, celery and low carb seeded crackers
Made a hm LC coffee and walnut cake today which I cut into portions and froze most of it just left a few pieces in fridge for next few days. I'm taking part online this weekend in the Public Health Collaboration's (PHC) 2025 conference so will be busy.

Dinner had two lamb burgers on a low carb roll with cheese served with salads

Just sampled my new coffee and walnut LC cake with cup of decaffeinated coffee.
Have u got any recipes for your lush cakes ....
 
There are a few companies that do them now. 2 of the best are https://lowcarbfood.co and
They both do pizza bases and other low carb goodies too.
Low carb food Co tend to use fewer weird ingredients.

Today I had scrambled eggs and avocado for breakfast.
Packed lunch taken to work was a SRSLY roll filled with cheese and chilli sauerkraut. Plus some strawberries and blueberries.
Dinner was kedgeree then one of the porridge slices I made earlier this week.
Has anyone else noticed how sweet strawberries are now? I only dared eat one. I don’t think it’s just because I don’t eat a lot of sweet stuff these days, I think they’re being deliberately ‘bred’ for increasing sweetness.

Have u got any recipes for your lush cakes ....
They are all Panda Pantry recipe s using Panda Flour. I've adapted them to the size of tin I use to make a biggish tray bake so can cut and freeze portions. I've also made some other adaptations to suit us - such as using less of the sweeteners. I started by using their sample packs with small amounts to see if we liked them - as not too much to pay until happy that worked and enjoyed the taste see

If after trying you'd like one of my adapted recipes I'm happy to type it up - at the moment they are all on bits of paper and use quite a lot of ingredients as larger cakes -so my advice would be to try a smaller bake. There are also lots of helpful videos of Mark from Panda Pantry demonstrating.

Rainy day so used opportunity to do some baking - made a panda low carb flour chocolate tray bake and also slow cooked some rhubarb with lemon and ginger for a few hours. I'm cooling overnight to make a low carb rhubarb and ginger cake tomorrow two photos of rhubarb so you can see lemons and ginger used

Lunch celery and cheeses followed by a couple of small strawberries ( I always find them sweet @DJC3 so I restrict to one large or two small!) with a spoon of yoghurt
Dinner two lamb burgers served on one keto chefs LC cheese topped roll with salad

Followed by a piece of my new hm LC chocolate cake and decaffeinated coffee
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: small fry up of bacon, egg and mushrooms with a little sugar free ketchup.

what's better: skipping breakfast or lunch?
I have done both over the years,and even as an obese type 2 diabetic at diagnosis skipped both breakfast and lunch to lose weight, and I've generally found it easier to delay breakfast to extend my time fasting and then eating a brunch. Currently though I tend to have lateish breakfast and then if busy and not hungry skip lunch. Important bit as I understand it is to have gaps between meals so that if have insulin resistance, as many Type 2s do, it allows the body to lower insulin production and hopefully eventually regain some insulin sensitivity. At normal weight now and in remission I mostly just fast 14 - 16 hours overnight but as I prefer small meals I now mainly eat three smallish low carb meals - as it seems to work best for me now 're nutrition and blood sugars.
It's working out what works best for you at this stage of your illness or recovery ie things such as when you feel hungry, impact on your blood glucose levels and if you need to lose some weight, bring your blood sugars down etc ....... And it may change over time.
