What have you eaten today? (Low carb forum)

Coffee and cream
Coffee and unsweetened almond milk
Cheese tomato
Milk Lolly
Smoked salmon
 
B- 2 fried eggs on a slice of protein bread.
Made a couple of bakes with my new Panda flour. I agree @shelley262 it’s very easy to work with. Lemon and blueberry muffins and tahini bread ( very happy to see a recipe for this as I’ve had a jar in the cupboard for ages).
Lunch was a slice of the tahini bread with some strong cheddar and chilli sauerkraut, followed by 1/2 of one of the muffins. Both were good.
D- a DietDoctor favourite: Asian cabbage stir fry. The sesame oil and wasabi mayo really lift this meal out of the ordinary. The other half muffin afterwards.

Inspired by the Great British Bake Off and the school bake theme this week I remembered jam tray bakes with affection so experimented with a diabetes friendly low carb one.I made a 'jam' by cooking and softening some frozen raspberries with lemon juice and using it once cooled under my tray bake sponge.
1758996406089.jpgI made a plain sponge topping with panda flour and had a good result despite a schoolgirl error of missing out the butter from the recipe. I was focused on my first bake using my new Ninja Foodie air fryer and forgot but still good and lack of fat made up by serving with extra thick cream!

Tomorrow I have plans to make the Panda Golden loaf which uses egg whites so am thinking of making low carb custard with the yolks to produce the real back to school experience - jam sponge and custard.
Breakfast kefir then poached eggs on toast
Lunch hummus and celery followed by hm LC chocolate brownie
Dinner hm chicken curry with fresh chopped coriander followed by a piece of my hm LC school 'jam' bake warmed with extra thick cream.

Home from holiday, so back to my normal eating. Need to lose the little bit of weight I put on!
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: Brie and a smidge of cranberry on a low carb roll with coleslaw.

More baking today used my new air fryer to bake a golden panda loaf worked really well. Baked well and sliced thinly when cooled to freeze for use over next few weeks.

Uses five egg whites so with yolks to use I also made Katie Caldesi's custard which I then put into a kilner jar and popped in fridge to use over next few days

Lunch hummus and celery followed by hm LC coffee and walnut cake
Dinner steak and roast veggies with spoon of hot horseradish sauce.

Followed by a portion of hm LC ' jam' sponge reheated in a mini souflee dish with a few spoons of my hm LC custard - so enjoyable.

B- Greek yoghurt and a few walnuts.
L- slice of low carb seedy bread topped with cottage cheese and a gherkin. 4 sq Montezuma’s
D- at my granddaughter’s birthday party. There were the usual sandwiches, crisps and cake on offer. I took my own egg mayo L/c roll and one of the L/c lemon and blueberry muffins to toast the birthday girl.
 
i sometimes it is full fat coke and i do have coke zero as salt
Wow! I don’t think many of us type 2s could drink ‘full fat’! I for one would get a huge spike! In fact I did when a pub gave me ‘full fat’ by mistake! See screen shot I took of my Libre graph!
