What have you eaten today? (Low carb forum)

Coffee and cream
Coffee and unsweetened almond milk
Cottage cheese
Corned Beef
Prawns cheese and tomatoes
 
Thanks for the get well wishes @shelley262 and @Rachox I’m feeling a bit more human today.
Had a decent breakfast of cottage cheese flatbread topped with mashed avocado and a fried egg.
L- salad, similar to yesterday.
D- Beef stroganoff with zoodles.

@DJC3 pleased that you are feeling more human today.
As it was a wet and blustery day today I decided to bake - tried out the new Panda Pantry Parkin very appropriate for an autumnal day.
It had a few different fiddly processes but well worth it - tastes perfect

Breakfast kefir then a few garden tomatoes ( a few left slowly ripening indoors from green to red!) Fried in olive oil served on hm LC toast
Lunch open ham sandwich on hm LC bread
Dinner salmon served with green beans and peas and mayonnaise

Followed by a piece of my hm LC sticky parkin.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: low carb cheese, tomato and mushroom pizza with coleslaw.

That Parkin looks so good! Did you add the optional dates?

I did but only used a couple for whole mix so over 16 pieces put carb content just up a bit. Think I'd try without next time as the depth of flavour comes from butter and inulin simmering I think. I also added a pinch of allspice which lifted the spice flavour even more.

Made chocolate and walnut brownies from the Katie Caldesi air fryer diabetes air fryer Cookbook

Wonderfully rich and chocolatey - had collected some walnuts from the local community orchard - as wind had helped them fall for easy picking! As instructed by Katie I toasted the walnuts in air fryer for three minutes and it definitely improved the walnuts.
Breakfast kefir then bacon and egg
Lunch indulged in a brownie still warm and sqidgy from air fryer with spoon of cream
Dinner slow cooked beef casserole served on a bed of air fried cabbage

Dinner: mushrooms and scrambled eggs on LC toast spread with Marmite.

Forgot to post yesterday but I did some baking, tried the Parkin with Panda flour. I didn’t add dates @shelley262 but I think it would have been better and more Parkin-y with dates. Still enjoyable, Paul’s verdict “ nice cake but it’s not Parkin!” ( that’s as big a thumbs up as I’ll ever get from my resident Yorkshireman!)
Panda flour shortcrust pastry was excellent though. I’m so glad to be able to make a proper pie again. We had a chicken and mushroom pie for dinner.

Today I had L/c toast topped with cottage cheese and chilli sauerkraut for brunch.
Family round to celebrate granddaughters birthday, her favourite meal is spag bol so that’s what we had. (Low carb co. Pasta for me instead of spaghetti)
They had birthday cake to follow, I had another of yesterday’s bakes- chocolate brownie with cream cheese frosting.

Haven't tried making the Panda Flour pastry but you've inspired me it looks amazing.
