What have you eaten today? (Low carb forum)

Breakfast kefir then two boiled eggs with soldiers cut from hm LC buttered bread
Lunch open ham sandwich on lc bread followed by hm LC lemon cake
Dinner pork medallions served with a mushroom, pepper and onion cream and mustard sauce ( just added cream and butter to pork juices).

Followed by a hm LC chocolate brownie.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: cheese and mushroom omelette.

B-boiled eggs, spinach, avocado and chilli sauerkraut.
L- tinned salmon in l/c roll followed by 4 sq Montezuma’s AB.
D- disappointingly small chicken breast stuffed with a L/c sausage. Mushrooms, green beans and airfried aubergine. H/m L/c brownie

Made my first batch today of low carb Panda flour shortcrust pastry


Made just one batch (used mix of lard and butter) and managed to make three lots of pastry goods:
6 jam tarts - no photo as jam definitely not low carb and they are for guests this weekend not me!
6 small quiche Lorraine ( bacon, spring onions, cheese and egg and cream mix)

A custard tart - also to use up egg yolks left from making LC protein loaf which uses five egg whites!

@DJC3 like you I found this pastry is very easy to work with and I agree with you it tastes like the real thing - not had proper custard tart for probably about 11 years. it used to be one of my fave sweet treats - before diagnosis almost 11 years ago!I
Breakfast kefir then garden tomatoes cooked in olive oil served on hm LC toast
Lunch three low carb crackers and vintage cheddar followed by a small tester slice of the LC custard tart
Dinner salmon and peas followed by another piece of the LC custard tart. Just had two pieces of 90% dark chocolate with decaffeinated coffee.

That custard tart looks fantastic @shelley262 I also used half and half lard/butter which is how I always made shortcrust. It’s so nice to have real pastry on the menu again isn’t it?
Today I had an open omelette for breakfast and threw in odd leftover bits from the fridge. Red pepper, cherry toms, feta and spinach.
Lunch was cheese and sauerkraut roll and 4 squares Montezuma’s
Dinner- 1 L/c sausage and baby back ribs, Marinated in a mix of sugar free ketchup, mustard, ACV and Lea&Perrins. Served with sauteed mushrooms and spinach. Small slice l/c parkin.

My meals may not be as low carb as others, but today for lunch I had a wholemeal corned beef & tomato sandwich (38g carbs), and for dinner I had three nests of egg tagliatelle (56g carbs) with a spicy, homemade minced beef bolognese-style sauce. My CGM seemed to approve; I might actually be getting into remission.

Sunday lunch today was a lamb shank in red wine gravy, with steamed cabbage, crunchy carrots and a medium sautéed potato.
