What have you eaten today? (Low carb forum)

Coffee and cream
Gouda x 2 slices
Chicken and salad x 2
Yogurt small greek
 
Breakfast kefir then bacon and egg
Lunch open sandwich using hm LC bread topped with ham and mustard followed by hm LC coffee and walnut cake
Dinner slow cooked beef casserole served with hm cauliflower cheese

Followed by LC hm lemon drizzle cake.
 
B- Gk yoghurt with seeds and blueberries
L-Egg mayo and avocado open sandwich ( L/c bread) Montezuma’s AB
D- Rack of hogget, cauli cheese and garlicky greens and sprouts. More Montezuma’s AB

Inulin powder can be used as a sweetener as it's a fructan that the body can't digest but it's not as sweet as others. Its around 10% of sweetness of table sugar per spoon. it's also really good for thickening and caramelizing when heated. It's a soluble fibre produced from plants and has several health claims 're gut health etc.
Thank you. Thickening and caramelizing would be good for some low carb options. I think I’ll look into trying some.
 
Breakfast kefir then scrambled eggs
Lunch picnic while out of ham and cheese sandwich made with hm LC bread followed by hm LC coffee and walnut cake
Dinner chicken breast wrapped in bacon and topped with cheese served with a few Mediterranean veg and a creamy mushroom sauce

Followed by hm LC lemon cake.

Today I seem to have been channelling my inner Ronald McDonald!
Breakfast reminded me of an egg McMuffin ( though I’ve never had one). Made with a Panda flour ‘puffet’, egg, cheese and ham.
Lunch was just some Parma ham, nuts and olives.
Dinner - back at Maccie Ds with a cheese quarter pounder. The burger was a Coop Irresistible Aberdeen Angus one. 1.2 carb per 170g burger and very good. SRSLY white roll and mixed salad with sauerkraut.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: coffee shop cappuccino and another carb killa bar.
Dinner: carbonara made with low carb pasta with a sprinkling of mature grated cheddar.

Yesterday - Greek yoghurt, small container of nutd - pecans, Brazils, walnuts,hazelnuts - a kiwi fruit - dinner another small container of nuts, Mediterranean thing of leftover lamb, peppers, aubergines, lamb gravy from roast, lemon slices, olive oil, not very substantial hence extra nots. 4 squares of Montezuma dark chocolate, yummy.

Dinner hm Bolognese with LC pasta served with grated vintage cheese followed by hm LC chocolate brownie

Chop suey no noodles. Tablespoon of brown rice.

Dinner: gammon steak with roasted Mediterranean veggies, and yes a blob of mayo!

Breakfast- fried egg on 1/2 a toasted Panda flour puffet
L- charcuterie meats, cheese and olives and some h/m l/c crackers.
D- lamb koftas with airfried veg and mint raita. Followed by the other half puffet topped with clotted cream and a sliced strawberry. Heavenly!

I haven't felt much like cooking lately, but over the last couple of days I've had a battered haddock fillet with mushrooms and mushy peas. I also had a lovely, home made butter chicken curry with a small portion of basmati rice.
