What have you eaten today? (Low carb forum)

@DJC3 thank you for the crimbo crumble heads up. I've mainly converted completely to making my own low carb cakes and puds, using Panda flour, but did love those Deliciously Guilt Free ones - so must buy a pack later at restock. I've also just ordered a Panda Pantry Christmas Cake Mix - it uses cranberries that have been dehydrated, as the dried fruit, no sugars added unlike commercially dried ones. Not made a Christmas Cake for about 10 years! I know it won't be the same but looking forward to baking it.
Breakfast kefir then scrambled eggs
Lunch cheese, walnuts and LC seeded crackers followed by buttered slice of hm LC barberry tea loaf
Dinner salmon and peas followed by hm LC chocolate brownie.

Chicken thigh and leg roasted

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: LC tomato, cheese and mushroom pizza with coleslaw.

I love making Christmas cake, even though I have to severely ration how much of it I get to eat. It smells so “ festive” cooking. Have always enjoyed moms tradition of monday spoon of Sherry, or brandy, for the cake, spoon for the cook.

Made a low carb loaf today - which uses lots of egg whites so decided to make some low carb egg custards to use up the egg yolks. I put a few frozen raspberries in the bottom of each individual ramekin and grated nutmeg on top before baking them. They turned out well. Popped in fridge, when cooled, for later.

Dinner hm chicken curry topped with fresh coriander followed by one of my chilled raspberry custards.

Lunch-Lactofree yoghurt ( half the carbs of other yoghurt at 1.8/100g but not as nice as Greek yoghurt) topped with M&S grain free granola. Handful of walnuts
Dinner- pheasant breast wrapped in bacon. ( our neighbour is a beater for local shoot and she often drops us off a brace at this time of year) cauli cheese and sauteed mix of onion, mushrooms and cavolo nero.
Crimbo crumble ( agree @shelley262 these are super. I’m also thinking of getting the Panda Christmas cake, the ingredients sound deliciously Christmassy)

Today's lunch was a lamb shank in red wine gravy, with Brussels sprouts, carrots and a couple of sautéed potatoes. I was quite hungry so I had it fairly early, and it was all lovely. I doubt I'll eat for the rest of the day, though.

Christmas shopping this morning fuelled by 3 Black coffees along the way.
Lunch at home: ham and cheese toastie in L/c bread. Lactofree yoghurt and walnuts.
Dinner: h/m chicken coconut curry with a side of harissa mushrooms&green peppers. Strawberries and clotted cream.

Dinner slow cooked steak casserole served with a few carrots followed by a hm LC raspberry custard pot

Lunch cheese and handful of plain mixed nuts
Dinner roast chicken served with a salad of celery, olives, sauerkraut and a few small tomatoes. Followed by hm LC lemon cake.
Had problems uploading photo again. Will try again tomorrow especially as planning same main meal!
 
B- 2 soft boiled eggs and microwaved cheese crackers.
L- Sort of Niçoise salad with tuna, olives, green beans, cherry toms and Parmesan. Strawberries and clotted cream.
D- Grilled gammon steak with green beans cauli cheese. ( easy microwave method so no crispy cheesy top) and grilled cherry toms Low carb spiced pumpkin muffin.

I often need easy hacks to have a meal, like today when my meal will be a fish fillet a la bordelaise from Aldis freezer section.
So how do you make your microwaved cauliflower cheese?

Pic of yesterdays meal for tax: A perfectly cooked pepper steak (lucky me, I never cook steak), a cob of corn with butter and salt, and a side salad of lots of onion, tomato, cottage cheese, balsamic vinegar, some leftover lemon mayo found in the fridge and salt and pepper. Salad not in the picture.

Dinner: bacon and feta cheese frittata with cauliflower, broccoli and carrots.
