To make Apple and Cinnamon Stuffing , you'll need:
  • 3 large slices of wholemeal bread 
  • 3 large slices of white bread 
  • 200ml water 
  • 1 tbsp. olive oil 
  • 1 large onion, finely chopped 
  • 1 apple, finely chopped 
  • 2 tsp. fresh sage, finely chopped 
  • 1.5 tsp. fresh thyme 
  • 400ml vegetable stock 
  • Salt and freshly ground pepper to taste

Method

  • Preheat the oven to Gas Mark 4 or 180°C. 
  • Place the wholemeal and white bread on a baking tray and toast for 20 minutes. 
  • Heat the olive oil in a big saucepan on medium heat. 
  • Put in the onion and cook for 4 minutes.  
  • Pop in the apples and cook for 4 more minutes. 
  • Add the vegetable stock and sage and thyme. 
  • Then lower the heat and simmer the mixture for 5 minutes. 
  • Grate the toast and season with salt and pepper. 
  • Lower the oven temperature to Gas Mark 3 or 160C°. 
  • Mix the breadcrumbs in with the vegetable stock and place in a greased casserole dish in the oven and cover with foil. 
  • Bake for 30 minutes and the stuffing is ready to relish.
