Ingredients
To make Apple And Onion Soup, you'll need:
  • 1 tbsp canola oil
  • 2 large onions - (8 oz ea) sliced
  • 1/2 tbsp chopped fresh rosemary = (or
  • 1/2 tspn crushed dried rosemary)
  • 1/2 tbsp chopped fresh thyme = (or
  • 1/2 tspn crushed dried thyme)
  • 2 tbsp oyster sauce = (available in Asian markets and some grocery stores)
  • 1 lb Granny Smith or Mutsu apples - (3 med) peeled cored and cut into thin slices
  • 6 cups fat-free no-salt-added canned chicken broth Salt (optional) to taste Freshly-ground black pepper to taste
  • 1/3 cup grated skim-milk sharp cheddar cheese

Method

  • Heat the oil in a large pot over medium heat
  • Add onions rosemary and thyme; sauté until onions wilt about 3 minutes stirring frequently.
