To make Apple Raisin Cakes, you'll need:
  • 2 eggs beaten
  • 1 cup unsweetened applesauce
  • 1 tsp cinnamon
  • 2 tsp sugar
  • 1 cup unbleached white flour
  • 1/2 cup whole-wheat flour
  • 2 tsp baking powder
  • 2 tsp vanilla
  • 1/2 cup golden raisins

Method

  • Combine all ingredients until blended
  • Cook on a nonstick griddle over medium heat until both sides are browned, about 5 to 7 minutes
  • Serve with additional applesauce.
