To make Balsamic Veggie Kabobs, you'll need:
  • 10 ten-inch metal or wooden skewers
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp freshly-ground black pepper
  • 1 medium yellow squash cut into
  • 20 chunks
  • 1 red onion cut into
  • 20 chunks
  • 1 medium zucchimi cut into
  • 20 chunks
  • 20 large mushrooms

Method

  • If using wooden skewers soak them in water for 20 minutes.
  • In a small bowl combine the oil vinegar garlic powder salt and pepper; mix well.
