Basil Rice Salad

Method

  • Combine the rice carrots tomatoes kidney beans and scallions in a salad bowl
  • Whisk together the remaining dressing ingredients
  • Add the dressing to the salad and toss well
  • Chill for 1 to 2 hours before serving.

To make Basil Rice Salad, you'll need:
  • 3 cups cooked brown or white basmati rice = (use regular brown or white rice if desired)
  • 1
  • 1/2 cups diced carrots
  • 2 medium tomatoes diced
  • 1 cup canned kidney beans drained rinsed
  • 2 scallions minced
  • 2 tbsp lemon juice
  • 2 tbsp red wine vinegar
  • 1/4 cup olive oil
  • 1/4 cup minced fresh basil
  • 2 tbsp minced fresh Italian parsley
  • 2 tsp sugar Salt to taste Freshly-ground black pepper to taste
