Ingredients
To make Braised Cod With Shiitake Mushrooms, you'll need:
  • Olive oil cooking spray as needed
  • 1 tsp olive oil
  • 1 lb shiitake mushrooms stems removed
  • 2 large shallots peeled minced
  • 2 garlic cloves peeled minced
  • 1 tbsp fresh thyme leaves = (or
  • 1 tspn dried thyme)
  • 3 tbsp balsamic vinegar
  • 4 center-cut cod fillets - (4 oz ea)
  • 1/8 tsp kosher salt optional Freshly-ground black pepper to taste

Method

  • Heat a large non-stick skillet over medium high heat
  • Coat with cooking spray and olive oil
  • Add the mushrooms and cook stirring until softened and liquid has evaporated
  • Add the shallot garlic thyme and 2 tablespoons vinegar
  • Cook 2 minutes stirring.
