To make Buttermilk Cornbread Muffins, you'll need:
  • 1 cup yellow cornmeal
  • 1 cup unbleached all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 eggs beaten
  • 3/4 cup low-fat buttermilk
  • 1/4 cup honey
  • 2 tbsp canola oil

Method

  • Preheat the oven to 375 degrees
  • In a large bowl combine the cornmeal flour baking powder and soda.
