Ingredients
To make Carrot Coleslaw, you'll need:
  • 2 medium carrots shredded
  • 1 cup shredded green cabbage
  • 1/2 cup shredded red cabbage
  • 1/2 cup lite mayonnaise
  • 1 tbsp skim milk
  • 1 tbsp lemon juice
  • 1/2 tsp sugar Freshly-ground black pepper to taste
  • 1 dash salt (optional)

Method

  • Combine the vegetables together in a large bowl
  • Whisk together the remaining ingredients and pour over the salad
  • Refrigerate for 1 hour before serving.
