To make Catalan Spinach And Pasta, you'll need:
  • 16 oz uncooked rotelle pasta
  • 2 cups water
  • 20 oz fresh spinach stems removed
  • 2/3 cup raisins divided
  • 2 tsp olive oil
  • 4 tsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp freshly-ground black pepper
  • 2 garlic cloves minced
  • 6 tbsp pine nuts

Method

  • Cook pasta according to package directions omitting salt
  • Drain; set aside.
