To make Cauliflower-Cheese Soup, you'll need:
  • 2 cups potato chunks
  • 3
  • 1/2 cups cauliflowerets divided
  • 1 medium carrot chopped
  • 3 medium garlic clove sliced
  • 1 large onion chopped
  • 1/2 tsp salt (optional)
  • 4 cups water or stock
  • 1
  • 1/2 cups grated low-fat cheddar cheese
  • 3/4 cup
  • 1% low-fat milk
  • 1/4 tsp dill weed
  • 1/4 tsp caraway seed
  • 1/4 tsp dry mustard Freshly-ground black pepper to taste
  • 3/4 cup buttermilk
  • 8 tsp chopped scallions or chives

Method

  • Cook potatoes 2 cups cauliflower carrots garlic onion salt and water for 10 minutes
  • Turn burner off and let set 15 minutes.
