To make Cheese And Potato Burritos, you'll need:

  • 4 oz shredded pepper jack or Monterey jack cheese
  • 2 green onions finely chopped
  • 3/4 tsp salt divided
  • 2 lb Roma tomatoes
  • 1 cup fresh cilantro - (lightly packed)
  • 1/2 jalapeño pepper - (to
  • 1) seeded and coarsely chopped
  • 1/4 small red onion coarsely chopped
  • 1 garlic clove quartered
  • 1/4 cup water
  • 1 tbsp fresh lime juice
  • 3/4 tsp ground cumin
  • 12 fat-free flour tortillas - (6" dia) Nonstick cooking spray as needed

  • Prepare barbecue grill for direct cooking.
