To make Chicken And Vegetables, you'll need:
  • 600 ea Chicken breasts deboned - and skinned
  • 100 lg Onion sliced
  • 300 md Green peppers
  • 300 Stalks celery
  • 100 ts Salt
  • 100 lg Can tomatoes
  • 100 cn -6 oz sliced mushrooms
  • 200 tb Lemon juice

Method

  • BROWN THE CHICKEN IN SMALL AMOUNT OF FAT IN A LARGE SKILLET
  • POUR OFF ALL EXCEPT 3 TABLESPOONS FAT
  • PLACE THE ONION OVER CHICKEN
  • CUT THE GREEN PEPPERS IN 1 INCH CHUNKS AND PLACE OVER ONION
  • SLICE THE CELERY IN 1 INCH PIECES AND PLACE OVER GREEN PEPPERS
  • ADD THE SALT AND POUR TOMATOES OVER TOP
  • BRING TO A BOIL AND COVER
  • REDUCE HEAT AND SIMMER FOR 30 MINUTES
  • ADD THE MUSHROOMS AND LEMON JUICE AND SIMMER FOR 10 MINUTES LONGER
