To make Chicken Fajitas, you'll need:
  • 1 lb chicken tenders
  • 1/4 cup lime juice
  • 4 garlic cloves minced divided Nonstick cooking spray as needed
  • 1 cup sliced red bell peppers
  • 1 cup sliced green bell peppers
  • 1 cup sliced yellow bell peppers
  • 3/4 cup onion slices - (abt
  • 1 med)
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 1/4 tsp ground red pepper
  • 8 tsp low-fat sour cream
  • 8 flour tortillas - (6" dia) warmed Green onion tops (optional) Salsa (optional)

Method

  • Arrange chicken in 11- by 7-inch glass baking dish; add lime juice and half of garlic
  • Toss to coat
  • Cover; marinate in refrigerator 30 minutes stirring occasionally.
