To make Chicken Garbanzo Tabouli, you'll need:
  • 2 cups bulgur
  • 2 cups boiling water
  • 2 cups diced cooked chicken
  • 1 tomato chopped
  • 3 green onions chopped
  • 1 can garbanzo beans - (16 oz) drained rinsed
  • 1/2 cup chopped red bell pepper
  • 1 carrot grated
  • 1/2 cup currants
  • 1/4 cup chopped dried apricots
  • 1/2 tsp salt (optional) Freshly-ground black pepper to taste
  • 2 tbsp chopped fresh basil
  • 1/4 cup chopped fresh parsley DRESSING
  • 1/2 cup lemon juice
  • 2 tbsp olive oil
  • 1 garlic clove crushed
  • 1/4 tsp cumin
  • 1/2 tsp curry powder
  • 1/2 tsp salt (optional) Freshly-ground black pepper to taste
  • 6 romaine lettuce leaves crisped

Method

  • Place bulgur in bowl
  • Pour boiling water over and let stand until water has been absorbed (15 to 20 minutes)
  • Cool.
