Method

  • Heat half the oil in a wok over high heat
  • Add the carrots and celery and stir fry for 3 minutes
  • Add remaining oil and chicken and stir fry 5 more minutes.

  • 2 medium carrots peeled and sliced on the diagonal
  • 2 celery stalks diagonally sliced

  • 3" strips
  • 1 tbsp cornstarch
  • 3/4 cup orange juice
  • 3 tbsp lite soy sauce
  • 1 tbsp honey
  • 1 tsp minced ginger
  • 1/4 cup toasted cashews unsalted
  • 1/4 cup minced scallions
