To make Chicken Roll-Ups, you'll need:
  • 1/4 cup fresh lemon juice
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp freshly-ground black pepper
  • 4 boneless skinless chicken breast halves
  • 1/4 cup finely-chopped fresh Italian parsley
  • 2 tbsp grated Parmesan cheese
  • 2 tbsp chopped fresh chives
  • 1 tsp finely-grated lemon peel
  • 2 large garlic cloves pressed
  • 16 toothpicks soaked in Hot water for
  • 15 minutes

Method

  • Combine lemon juice oil salt and pepper in 11- by 7-inch casserole
  • Pound chicken to 3/8-inch thickness
  • Place chicken in lemon mixture; turn to coat
  • Cover; marinate in refrigerator at least 30 minutes.
