Method
Remove as much fat as possible from the meat
Cut across the grain into 1/4 inch slices and cut again into 1-inch pieces
Mix coenstarch and soy sauce together
Place mear in mixture making sure it is completely covered
Wash seed and slice peppers about 1.4 inch thick
Wash and slice mushrooms
Spray wok or skillet with vegetable oil spray
Heat wok and add ginger and garlic
When wok is smoking add meat and stir fry 1 minute
Reove toa plate
Spray wok again and add peppers and mushrooms
Stir fry 2 minutes
Return meat to pan and add sherry and stock
Stir fry 3 minutes
Remove to a serving bowl.

To make Chinese Pepper Steak, you'll need:
Flank or skirt steak; well -trimmed of any fat
200 tb Cornstarch
200 tb Low salt soy sauce
200 md Green peppers; sliced 025 lb Mushroom; sliced Vegetable oil spray
100 tb Fresh ginger; chopped
200 cl Garlic; crushed 025 c Dry sherry 025 c Defatted low-salt chicken -stock
