Choose-A-Fruit Ice

Serves: 6

Method

  • Use fresh or frozen unsweetened berries
  • In a 2 cup measure stir the sugar into warm water till dissolved
  • In a blender container or food processor bowl combine desired fruit sugar mixture and lemon juice
  • Cover and blend or process till mixture is nearly smooth
  • Pour into a 9 x 5 x 3" loaf pan
  • Cover and freeze for 4 to 5 hours or till almost firm
  • Transfer the frozen mixture to a chilled large mixer bowl
  • Beat with electric mixer on medium speed for 2 minutes or till fluffy
  • Return fruit mixture to loaf pan
  • Cover and freeze for 6 hours or till firm
  • Let the fruit ice stand about 20 minutes at room temperature before serving
  • To serve use an ice-cream scoop and scrape along ice to form a scoop
  • If desired garnish each serving with mint sprig or fresh berries.
