To make Chuck Wagon Tenderloin Salad, you'll need:
  • 3 cups cooked wagon-wheel pasta = (or use any other shaped pasta)
  • 1
  • 1/2 lb cold cooked beef cut into strips abt
  • 1
  • 1/2" long by
  • 1/2" wide = (use leftover lean sirloin)
  • 1 small onion very thinly sliced
  • 1 green pepper very thinly sliced
  • 1 cup low-sodium barbecue sauce
  • 1/4 cup Dijon mustard
  • 3 cups red leaf lettuce
  • 3 cups green leaf lettuce
  • 2 large tomatoes sliced

Method

  • Combine the pasta beef onion and green pepper in a salad bowl
  • Mix the barbecue sauce and Dijon mustard together in a separate bowl; add to the salad.
