To make Curried Eggs, you'll need:
  • 5 large free range eggs
  • Salt to taste
  • ¼ tsp. turmeric powder
  • 2.5 tbsp. fresh coriander, finely chopped
  • 1 small onion, finely chopped
  • 2 tbsp. olive oil

Method

  • Pop the eggs into a pan of boiling water, with enough water to cover the eggs and cook for 7 minutes.
  • Then, drain the water and peel the shells of the eggs under cold water. When cool, chop the eggs and thrown nto a big bowl.
  • Next, pour the oil in a non-stick frying pan on a medium heat and cook the onion for 4 minutes.
  • Mix in the salt, turmeric and coriander.
  • Add the chopped eggs and combine thoroughly.
  • Divide the curried eggs onto two plates and serve with a fresh salad and wholemeal pitta!
