Ingredients
To make Curried Eggs, you'll need:
- 5 large free range eggs
- Salt to taste
- ¼ tsp. turmeric powder
- 2.5 tbsp. fresh coriander, finely chopped
- 1 small onion, finely chopped
- 2 tbsp. olive oil
Method
- Pop the eggs into a pan of boiling water, with enough water to cover the eggs and cook for 7 minutes.
- Then, drain the water and peel the shells of the eggs under cold water. When cool, chop the eggs and thrown nto a big bowl.
- Next, pour the oil in a non-stick frying pan on a medium heat and cook the onion for 4 minutes.
- Mix in the salt, turmeric and coriander.
- Add the chopped eggs and combine thoroughly.
- Divide the curried eggs onto two plates and serve with a fresh salad and wholemeal pitta!
