To make Diabetic Carrot-Raisin Salad, you'll need:
  • 2 cup Carrots grated
  • 1 cup Crushed pineapple drained & -unsweetened
  • 1/2 cup Raisins
  • 8 oz Yogurt plain & lo-fat
  • 7 Lettuce leaves optional

Method

  • Combine carrots pineapple and raisins; mix well
  • chill for 2-3 hours Stir in yogurt and serve on a lettuce leaf if desired
