Diabetic Coconut Cake

Method

  • Heat oven to 350 degrees
  • Grease three 9-inch cake pans
  • Sift flour measure and place in sifter add baking powder and salt; sift again
  • Set aside
  • Cream shortening until fluffy add sugar a little at a time until all is used
  • Add egg whites one at a time and beat until fluffy
  • Add dry ingredients alternately with milk a little at a time; beginning and ending with dry ingredients
  • Add extracts and beat 2 minutes on medium speed
  • Divide into prepared pans and bake 25 to 30 minutes.
