To make Diabetic Coconut Fruit Cookies, you'll need:
  • 1
  • 1/2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup diet margarine
  • 1/3 cup flaked coconut
  • 1 egg
  • 1/2 cup unsweetened fruit juice
  • 2 tsp orange or lemon peel grated Sugar Substitute Equal to
  • 1/3 c sugar

Method

  • Preheat oven to 400 degrees
  • Combine flour baking powder baking soda and salt cut in margarine until consistency of peas
  • Stir in coconut add remaining ingredients all at once
  • Stir with fork until dough holds together
  • Drop about 2 inches apart by t easpoons onto an ungreased cookie sheet
  • Bake until light golden brown (about 10 minutes)
  • Yield: 3 dozen.
