To make Dijon Chicken Salad, you'll need:
  • 1 cup Low-sodium chicken broth
  • 1 package (4-serving size) JELL-O Brand Lemon Flavor Sugar- Free Gelatin
  • 3/4 cup Cold water
  • 1 tbsp Vinegar
  • 1/4 tsp Black pepper
  • 1/4 cup Plain lowfat yogurt
  • 2 tbsp Reduced-calorie sour cream
  • 1 tbsp Dijon-style mustard
  • 1 cup Finely chopped cooked chicken breast
  • 1 cup Finely chopped celery
  • 1/2 cup Chopped green or red pepper

Method

  • Bring chicken broth to a boil in small saucepan
  • Completely dissolve gelatin in boiling broth
  • Add water vinegar and black pepper
  • Chill until slightly thickened
  • Stir in yogurt reduced-calorie sour cream and mustard
  • Chill until slightly thickened
  • Stir in remaining ingredients
  • Spoon into 3 individual plastic containers (for brown-bagging) or serving dishes
  • Chill until firm about 2 hours
  • Makes 3 1/4 cups or 3 entree servings.
