Eggplant Parmesan

Method

  • Peel the eggplant and cut into 1/4-inch slices
  • Spray a large skillet with nonstick cooking spray
  • Layer the eggplant slices in the skillet add the water and cover
  • Simmer until tender adding more water if necessary.

  • 1 pt part-skim ricotta cheese
  • 1 can tomato sauce - (15 oz)
  • 1 garlic clove crushed
  • 1 tbsp basil
  • 1/2 tsp oregano
  • 1/2 cup Italian seasoned bread crumbs
  • 2 tbsp grated Parmesan cheese
