To make Family Turkey Loaf, you'll need:
  • Olive oil cooking spray 075 c Minced onion 075 c Minced scallion including Some green 050 c Minced celery 050 c Minced carrot 025 c Minced green bell pepper 025 c Minced red bell pepper
  • 200 Cloves garlic minced 050 ts Salt (optional) 025 ts Cayenne pepper or to taste
  • 100 ts Freshly ground pepper 050 ts Ground cumin 050 ts Ground nutmeg 050 c Evaporated skim milk 050 c Low-sodium ketchup
  • 200 lb Ground turkey
  • 200 lg Eggs beaten
  • 200 lg Egg whites 075 c Dry bread crumbs

Method

  • Preheat oven to 350 degrees
  • Spray a large nonstick skillet with cooking spray
  • Add onion scallion celery carrot bell peppers and garlic
  • Saute over low heat until vegetables are tender and liquid is absorbed about 10 minutes
  • Cool and set aside
  • Meanwhile combine salt cayenne pepper cumin and nutmeg
  • Add to vegetable mixture
  • Stir in evaporated skim milk ketchup turkey eggs egg whites and bread crumbs
  • Mix well
  • Form into a loaf and place in a baking dish lightly sprayed with cooking spray
  • Bake 45 to 50 minutes
  • Remove from oven and pour off all fat
  • Let stand for 10 minutes before slicing.
