Ingredients
To make Fresh Vegetable Lasagna, you'll need:
  • 8 oz uncooked lasagna noodles
  • 1 package frozen chopped spinach - (10 oz) thawed well drained
  • 1 cup shredded carrots
  • 1/2 cup sliced green onions
  • 1/2 cup sliced red bell pepper
  • 1/4 cup chopped fresh parsley
  • 1/2 tsp freshly-ground black pepper
  • 1
  • 1/2 cups low-fat cottage cheese
  • 1 cup buttermilk
  • 1/2 cup plain nonfat yogurt
  • 2 egg whites
  • 1 cup sliced mushrooms
  • 1 can artichoke hearts - (14 oz) drained chopped
  • 8 oz shredded part-skim mozzarella cheese (2 cups)
  • 1/4 cup freshly-grated Parmesan cheese

Method

  • Cook pasta according to package directions omitting salt
  • Drain
  • Rinse under cold water; drain well
  • Set aside.
