To make Fruit-Full Tossed Chicken Salad, you'll need:
  • 1 package mixed baby greens - (4 oz)
  • 2 cups chunked cooked chicken breast
  • 2 scallions thinly sliced
  • 1 cup sliced strawberries
  • 1 can no-sugar-added sliced peaches - (15 oz) drained with liquid reserved
  • 3 tbsp no-sugar-added peach preserves
  • 1 tbsp red wine vinegar
  • 1 tsp yellow mustard
  • 1/8 tsp ground red pepper

Method

  • In a large salad bowl combine the baby greens chicken scallions strawberries and peaches.
