Goats Cheese Walnut and Avocado Salad

Ingredients
To make Goats Cheese Walnut and Avocado Salad, you'll need:
FOR THE SALAD: - 600g spinach, roughly chopped
- 200g cherry tomatoes
- 200g sweetcorn
- 2 large avocados, sliced
- 50g walnuts
- 100g hard goat’s cheese, finely grated
- 20g toasted pine nuts
FOR THE DRESSING: - 2.5 tbsp. white wine vinegar
- 2 tbsp. extra-virgin olive oil
- 1 tbsp. Dijon mustard
- Salt and freshly ground black pepper, to taste
Method
- Put the spinach in a big salad bowl. Add the tomatoes, sweetcorn, slices of avocado, walnuts and toasted pine nuts.
- Whisk together the white wine vinegar, the olive oil, mustard and season it with the salt and pepper. Drizzle this over the salad.
- Toss the salad a little at a time so that the dressing evenly covers the salad.
- Grate some hard goat’s cheese onto the salad and tuck in!
