To make Grilled Mackerel With Chopped Tomatoes, you'll need:

  • 5 oz mackerel fillets
  • 3 tsp Fresh lemon juice
  • 1/4 tsp Freshly ground pepper
  • 1/2 tsp Crumbled dried oregano
  • 2 cups Chopped fresh tomato
  • 1/2 cup Chopped fresh parsley

Method

  • Arrange mackerel pieces in a shallow baking pan.
  • Combine lemon juice pepper and oregano; Sprinkle over medium-hot coals about 3 to 4 minutes on each side depending on the thickness of the fish.
  • Fish is done when it flakes easily when tested with a fork.
  • Place mackerel on individual serving dishes.
  • Combine tomato and parsley and spread decoratively around and over the mackerel.
  • Serve fish hot.
