To make Grilled Salmon Steaks With Tarragon Sauce, you'll need:
  • 4 fresh salmon steaks
  • 1" thick - (5 oz ea)
  • 3 tbsp fresh lemon juice TARRAGON SAUCE
  • 2 shallots minced
  • 2 tbsp chopped fresh tarragon = (or
  • 2 tspns crushed dried tarragon)
  • 1 cup plain nonfat yogurt
  • 1 medium plum tomato - (3 oz) seeded and finely minced
  • 1 tbsp minced flat-leaf parsley

Method

  • Start a grill or preheat broiler
  • Brush both sides of salmon with lemon juice
  • Grill for 5 to 6 minutes per side turning once until salmon flakes when prodded with the tines of a fork.
