To make Grilled Tuna With Black Bean Salsa, you'll need:
  • 1
  • 1/2 lb fresh tuna steaks cut
  • 1/2" thick
  • 2 tsp olive oil
  • 3 sprigs fresh lemon thyme
  • 1/2 tsp dried thyme crushed
  • 1/2 lime grated zest of freshly ground pepper to taste
  • 1 orange cut in
  • 6 wedges BLACK BEAN SALSA olive oil cooking spray
  • 1 small red onion unpeeled
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 small fresh jalepeno chili
  • 1 large clove garlic unpeeled
  • 1
  • 1/2 cups black beans cooked
  • 1 tsp orange zest grated
  • 1 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 1 tbsp fresh marjoram fresh OR
  • 1 tsp dried marjoram crushed

Method

  • Marinate tuna in olive oil thyme and lime zest for 25 to 30 minutes before grilling
  • Season with pepper
  • Grill or broil over medium-hot coals 4 inches from of heat for 2 to 3 minutes per side ( center should be rare)
  • Serve with Black Bean Salsa
  • Offer a wedge of orange to squeeze over tuna and beans.
