To make Healthy Pumpkin Pie, you'll need:
  • 1 unbaked
  • 9" pie shell
  • 1 package soft tofu - (123 oz)
  • 2 cups canned cooked pumpkin
  • 3/4 cup brown sugar
  • 1 tbsp canola oil
  • 1 egg
  • 1
  • 1/2 tsp cinnamon
  • 3/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves

Method

  • Drain tofu and blend in a food processor or blender until smooth
  • Add remaining ingredients blend well.
