Ingredients
To make Hearty Bean Soup, you'll need:
  • 2 tbsp Vegetable oil
  • 1/2 cup Chopped onions
  • 1/2 cup Chopped celery
  • 1/2 cup Chopped carrots
  • 1/2 cup Chopped green peppers
  • 1 cl Garlic minced
  • 12 oz Cooked navy or great Or
  • 12 oz Great northern beans
  • 2 cup Water
  • 16 oz (1 can) chopped tomatoes
  • 1/2 tsp Dried basil
  • 1/2 tsp Dried oregano
  • 1 Bay leaf Salt and pepper to taste
  • 2 tbsp Parmesan cheese

Method

  • Heat oil in large saucepan
  • Add onions celery carrots green pepper and garlic
  • cook until tender about 10 minutes
  • Add water if necessary to prevent drying
  • Add beans water tomatoes and spices
  • Reduce heat to low and cook 1 hour
  • Remove and discard bay leaf
  • Sprinkle cheese over soup before serving.
