Method
Combine all ingredients in a large saucepot
Bring to a boil
Reduce the heat and simmer for 1 hour until the vegetables are tender

1 can whole tomatoes - (28 oz) chopped drained
1 cup chopped onion
1 cup diced potatoes
1 cup sliced carrots
1 cup yellow corn
1 cup frozen or fresh shelled peas
1 cup cooked kidney black or pinto beans drained and rinsed if canned
2 tsp oregano
1 tbsp fresh minced parsley
1 bay leaf Freshly-ground black pepper to taste
