To make Holiday Shrimp Stir-Fry, you'll need:

  • 1/2 lb fresh jumbo shrimp peeled deveined
  • 1 tsp corn oil
  • 2 scallions minced
  • 2 tsp minced ginger
  • 2 garlic cloves minced
  • 3/4 cup low-sodium low-fat chicken broth
  • 3 tbsp lite soy sauce
  • 2 tbsp cidar vinegar
  • 2 tsp rice vinegar
  • 1/4 tsp chili powder
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 3 cups hot cooked brown rice

Method

  • Heat the oil in a large skillet or wok over medium-high heat
  • Add the scallions ginger and garlic
  • Stir-fry for 30 seconds.
