To make Home-Made Turkey Sausage, you'll need:
  • 1
  • 1/4 lb coarsely-ground white turkey
  • 1 tsp kosher salt
  • 1 1/2 tsp freshly-ground black pepper or to taste
  • 2 tsp chopped fresh sage = (or 1/2 tspn dried sage)
  • 2 tsp chopped fresh thyme = (or1/2 tspn dried thyme)
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1 tbsp Calvados
  • 1
  • 1/2 tbsp finely-grated orange zest Olive oil cooking spray as needed

Method

  • Combine well the turkey, salt, pepper, sage, thyme, ginger, nutmeg, Calvados, and orange zest in a bowl.
  • Spray a nonstick skillet with cooking spray and sauté a small bit of sausage mixture to test for seasoning. Correct if necessary. Form the remainder into 6 patties, about 1/2 inch thick, and sauté until browned on both sides and cooked through. Serve hot from the pan.
