To make Hot Chinese Chicken Salad, you'll need:
  • 8 oz fresh or steamed Chinese egg noodles
  • 1/4 cup fat-free reduced-sodium chicken broth
  • 2 tbsp reduced-sodium soy sauce
  • 2 tbsp rice wine vinegar
  • 1 tbsp rice wine = (or dry sherry)
  • 1 tsp sugar
  • 1/2 tsp red pepper flakes
  • 1 tbsp vegetable oil divided
  • 1 garlic clove minced
  • 1
  • 1/2 cups diagonally-sliced fresh pea pods
  • 1 cup thinly-sliced green or red bell pepper
  • 1 lb boneless skinless chicken breasts cut
  • 1/2" pieces
  • 1 cup thinly-sliced red or green cabbage
  • 2 green onions thinly sliced

Method

  • Cook noodles in boiling water 4 to 5 minutes or until tender
  • Drain; set aside.
