Method

  • Mix all ingredients except the coconut and the lettuce
  • Cover and chill for 1-2 hours
  • Place lettuce leaves on a plate spoon mixture onto lettuce leaves and garnish with the coconut.

  • 1 cup Orange sections fresh peeled
  • 1/2 cup Sliced strawberries
  • 1 cup Fresh pineapple chunks
  • 1/2 cup Sliced Kiwi fruit peeled
  • 1 cup Plain yogurt
  • 1 cup Cantalope balls
  • 1/3 cup Dates chopped
  • 2 tbsp Shredded coconut
  • 6 Lettuce leaves
