To make Indian Carrot Soup, you'll need:
  • Nonstick cooking spray as needed
  • 1 small onion chopped
  • 1 tbsp minced fresh ginger
  • 1 tsp olive oil
  • 1
  • 1/2 tsp curry powder
  • 1/2 tsp ground cumin
  • 2 cans fat-free reduced-sodium chicken broth (14 oz ea) divided
  • 1 lb peeled baby carrots
  • 1 tbsp sugar
  • 1/4 tsp ground cinnamon
  • 1 pinch ground red pepper
  • 2 tsp fresh lime juice
  • 3 tbsp chopped fresh cilantro
  • 1/4 cup plain nonfat yogurt

Method

  • Spray large saucepan with cooking spray; heat over medium heat
  • Add onion and ginger; reduce heat to low
  • Cover; cook 3 to 4 minutes or until onion is transparent and crisp-tender stirring occasionally.
