To make Indian Potato Salad, you'll need:
  • 1 lb russet potatoes peeled diced
  • 1 tbsp canola oil
  • 1/2 cup diced onion
  • 2 garlic cloves minced
  • 1 tbsp ground coriander
  • 2 tsp ground cumin
  • 1/2 tsp turmeric
  • 1
  • 1/2 cups plain low-fat yogurt stirred until smooth

Method

  • In a pot of boiling water cook the peeled and diced potatoes for about 15 minutes until tender
  • Drain and set aside.
