To make Italian Rice Medley, you'll need:
  • 2 tbsp olive oil
  • 4 scallions minced
  • 1 medium red pepper seeded chopped
  • 1 can artichokes packed in water - (14 oz) drained chopped
  • 1 tbsp minced fresh basil
  • 1 tbsp minced fresh oregeno
  • 1 tbsp minced fresh Italian parsley
  • 3 cups cooked long-grain rice
  • 1 tbsp balsamic vinegar

Method

  • Heat the oil in a medium skillet over medium-high heat
  • Add the scallions and red pepper and saute for 5 minutes.
