To make Italian Vegetarian Lasagna, you'll need:
  • 1200 Uncooked lasagna noodles 050 c Dry sherry or unsweetened Apple juice
  • 100 Medium onion finely chopped
  • 800 oz Sliced fresh mushrooms
  • 200 Large zucchini coarsely Grated (about
  • 4 cups)
  • 200 Medium red or green bell Peppers seeded & chopped
  • 200 c Fresh spinach
  • 100 ts Dried basil leaves 050 ts Dried oregano leaves
  • 1500 oz Light ricotta cheese
  • 100 c Nonfat cottage cheese 025 c Grated Parmesan cheese
  • 100 (8 oz) can tomato sauce
  • 400 oz (1 cup) shredded low Moisture part-skim Mozzarella cheese

Method

  • Heat oven to 425F
  • Spray 13 x 9" (3 quart) baking dish with nonstick cooking spray
  • Cook lasagna noodles to desired doneness as directed on package
  • Drain; keep warm.
